@thisbrownmom: Chana Masala (chickpeas simmered in a tomato based gravy seasoned with a blend of aromatic spices) Ingredients - 1 tsp jeera seeds - 1 cinnamon stick - 4 peppercorns - 2 cardamom pods - 2 tbsp oil - 1 tbsp butter - A sprig of curry leaves - 1 tbsp green masala - 1 large onion, pureed - 2 cans or 500g chickpeas (pre-boiled, rinsed, and drained) - 1 green chili (adjust to taste) - 2 roma/jam tomatoes, peeled and pureed - 1 tsp turmeric - 1 tsp ground jeera (cumin) - 1 tsp ground dhaniya (coriander) - ¾ tbspKashmiri masala - ¾ tbsp leaf masala - Salt to taste - 2 cups water - Fresh coriander for garnish Instructions: 1. In a pot, heat the oil, butter, and add jeera seeds, cinnamon stick, peppercorns, cardamom pods, and curry leaves. Allow them to heat up and become fragrant. 2. Add the pureed onion and simmer for about 10 minutes until it becomes translucent. 3. Stir in the green masala and green chili, and fry for another minute. 4. Add turmeric, ground jeera, ground dhaniya, and Kashmiri masala. Allow the spices to cook for a minute, stirring continuously. 5. Pour in the pureed tomatoes and cook until the oil separates from the mixture. 6. Add the pre-boiled and drained chickpeas, salt to taste, and 2 cups of water (if you boiled your chickpeas, use the water from there). 7. Cover and simmer for 30 minutes, allowing the flavors to meld and the sauce to thicken. 8.
