Lemon Poppyseed & Raspberry Cake ☀️ This cake is light and soft, perfect for the summer! I love adding poppyseeds into my cakes as it adds just the perfect amount of crunch which pairs so well with the soft texture of the sponge. I layered the cake with homemade raspberry jam and a creamy lemon buttercream - the flavours honestly go so well together. So fresh and delicious! #Recipe 360g self rising flour 1 tsp baking powder 1/2 tsp bicarb 1 tsp vanilla extract 150g sugar 360ml dairy free milk 1 tsp apple cider vinegar Zest and juice from 2 lemons 90g dairy free yogurt 90g light olive oil 6 tbsp poppyseeds Raspberry Chia Jam 500g raspberries 1 tsp vanilla bean paste 3 tbsp maple syrup 3 tbsp chia seeds Lemon Frosting 227g dairy free butter, softened to room temperature 420g powdered sugar 1 tsp lemon extract 2 tbsp lemon juice Method 1. Preheat the oven to 170 C Fan 2. Line 3 round cake tins (6 inch) 3. Mix together milk, lemon juice and vinegar - set aside to thicken. 4. Mix in the remaining wet ingredients. 5. Sift in the dry ingredients. 6. Pour the mixture into the tins. 7. Bake for 20-30 mins, or until cooked through. 8. Leave to cool before levelling off the cake. 9.Put the raspberries in a saucepan with the vanilla and syrup, then cook over a low heat for 5 mins. Mix in the chia seeds and cook for 10 mins. Set aside to cool completely and thicken. 10. With a hand mixer or paddle attachment on your stand mixer, cream the butter on medium-high until it’s creamy and light in colour. With the mixer on low, add the powdered sugar bit by bit, scraping down the sides of the bowl after each addition. Add the lemon juice and extract. 12.
