Wash and freeze them whole, then when you are ready to can, cook, run through a colander and can the juice.

have you tried freezing in ziplock bags? they stack so nice in the freezer and defrosts in just minutes under the tap. I've never gone back

I thought indeterminate tomatoes meant they’ll keep growing taller as opposed to determinate meaning they only grow to a certain size? 🤔

my mom used to can the hard way then she got smart and blanched the tomatoes removed the skin and stored them in plastic baggies and threw them in the freezer
