@chacekitchen: The second it drops below 70 degrees=tomato soup and grilled cheese Ingredients (serves 4): -8 roma tomatoes, quartered -1 pack of cherry tomatoes -1 yellow onion, roughly chopped -6-8 cloves of garlic, peeled -4 tbsp olive oil -3 ish cups vegetable broth -2 tbsp basil -salt and pepper to taste -splash of heavy cream (you can add more and mix in if you like it creamy) -basil to top -olive oil drizzle to top Instructions: -add tomatoes, onion, and garlic to a roasting pan. Cover generously with olive oil, salt, and pepper. Roast in the oven at 400 degrees for about 40 minutes, until the vegetables are nice and soft. -add your roasted veggie mixture to a pot on low/medium heat. -add vegetable broth and use an immersion blender to blend the veggies and broth together. If you don’t have an immersion blender, you can just throw the veggies in a regular blender and blend until smooth before adding to your pot. -once soup is nice and creamy, add your basil, salt, and pepper. Add cream here if you like it creamer, and mix well. -the only acceptable way to serve is with a grilled cheese on the side. I add a drizzle of cream, olive oil, and basil to top for garnish.
