When the oil is shimmering, add the shallots, ginger, and garlic. Sauté just until fragrant. (Do not let the ingredients brown.) 2.   Add the ketchup and reserved marinade. Cook over medium-low heat until the sauce is fragrant, about 2 minutes. Transfer to a blender and blend on high until smooth. Set aside to cool. Once cool, transfer to a resealable container and place in the fridge until you're ready to cook. LET'S DO IT! 1.   Set up the grill for two-zone cooking. Preheat to 375°F (191°C). 2.   Remove the chicken from the fridge and discard the marinade.
Remove the BBQ sauce from the fridge and set aside. 3.   Place the chicken over indirect heat. Cook the chicken for 30 minutes, flipping the pieces every 10 minutes to ensure even cooking. 4.   After 30 minutes, begin very lightly brushing the chicken with the barbecue sauce every 10 minutes, being careful not to brush so hard as to remove the spices from the surface of the chicken. Continue cooking for another 20 to 30 minutes or until the internal temperature
