Swiss Butter: Steak Entrecote sauce: Bowl 1: 1 cup butter 2 shallots 1 oz tarragon 1 oz basil 1 oz parsley 10 capers Few pieces of anchovies Few pieces of walnuts Bowl 2: ½ lemon 1 tbsp Worchester sauce 1 tsp Dijon mustard 2 egg yolk Salt and pepper to taste In a pan over medium heat, add the butter and chopped shallots; allow to cook for 5 minutes till the shallots are translucent then remove from heat. To a blender (or food processor), add the butter, shallots and the remainder of the ingredients for bowl 1; blend all together. To a separate bowl, add the ingredients of bowl 2 and whisk together Pour the blended ingredients of bowl 1 over bowl 2 while continuously whisking Heat in the pan for a couple minutes prior to serving. Steak: Ribeye or NY Strip Steak Salt & black pepper 2 tbsp olive oil ¼ cup butter 4 garlic cloves Rosemary Marinate the steak in a salt and black pepper. To a pan over high heat, add the olive oil and steak. Sear the steak on all sides till crispy. Drop the heat to medium then add in the butter garlic cloves and rosemary. Baste the steak with the butter until you achieve your desired doneness.
