Ingredients. . 500g 5% beef mince 150g diced smoked bacon 1 onion (finely diced) 2 medium carrots (finely diced) 2 peppers (sliced or diced) 2 cloves garlic (finely grated) 1tbs tomato purée 1tbs Italian mixed herbs 1 beef stock cube 500g passata 800g potatoes, mashed 4tbs pesto 120g cheese- I used a mix of cheddar, Red Leicester and mozzarella . Method. . Fry off the onions, carrots and peppers until soft then add the garlic. Add your bacon and cook for a few minutes, then add the beef mince and cook until brown. Add the tomato purée, stock cube, herbs and passata and cook on a low heat for at least 30 min (longer the better). I put it in the slow cooker and left it on high for 4 hours (optional). Transfer your bolognese mix to the dish. Add in the pesto to your mash and top the bolognese mix with it. Sprinkle over the cheese and pop in the oven on 200°c for 20-30 minutes (longer if it’s straight from the fridge). . . #fyp #viral #bolognese
