@jujumaoo: Chicharon w/ Feta dip 🐖 Here’s another kitchen experiment for you guys 😳 Verdict: It was very delicious but also sinful 😩 The rich and crispy pork belly paired well with the tangy feta dip. Would recommend but I think it would pair best with some sort of flat bread and herbs to cut through all that richness. It works though!! *note: this is not the traditional way of making chicharrones but rather a shortcut-ish you can do at home 🫶 INGREDIENTS: Feta Dip: - feta cheese - 2 whole roasted garlic - 1 lemon, juiced - 3 tbsp Olive oil - 3/4 cup Greek yogurt - Pepper Crispy pork: - 1kg pork belly (sliced lengthwise) - onion, garlic, bay leaves, peppercorns, salt INSTRUCTIONS: - Make crispy pork belly by boiling pork belly with onion, garlic, bayleaves, peppercorns and salt for around 20-30mins. Rub with salt and let dry overnight in fridge. - Air fry pork at around 175C for 40mins-1hr or until the skin is slightly hard but still has some resistance when you touch the skin. Remove and let cool. - In a pot with really hot oil >180C drop your pork belly pieces and cook for 3-5mins or until the skin is bubbly and crispy. Chop pork belly into cubes and set aside. - Make feta dip by combining all ingredients listed above for the dip in a food processor.
