@erekasfood: SAVE my PASTINA AND VEGETABLE SIX DAY SOUP for the next time you or one of your littles is sick. It’s quick, easy and sooooo comforting. Ingredients: 1 tbsp olive oil 1 large zucchini diced 3/4 tsp salt 1/4 tsp pepper 2 large Yukon gold potatoes diced 6 cups chicken broth 1 cup pastina (stelline or acini di pepe) 1 large carrot 4 eggs Grated Parmigiano Reggiano -Add olive oil to a large pot and heat over medium-high. Once the oil is hot, add the zucchini and cook for 2 minutes…just long enough to brown. -Add chicken broth, salt, pepper and bring to a boil. -Add potatoes. Let cook for 4 minutes, then add pastina. -Let pastina cook for 5 minutes, then grate in the carrot and whisk in the eggs. Cook for 3 minutes more or until the eggs are fully cooked. -Serve warm with grated Parmigiano Reggiano. #pastina #souprecipe #yum
