@chacekitchen: This mediterranean bowl is in our weekly dinner rotation! It also makes for great leftovers so i always make a little extra. Meatballs: -1 lb ground turkey -1 egg -1/4 cup bread crumbs -4 cloves minced garlic -2 tbsp chopped parsley -2 tbsp chopped dill -2 tbsp chopped red onion -1 tsp garlic powder -1 tsp onion powder -1 tsp salt -1 tsp black pepper -large spoonful of Trader Joe’s chili garlic sauce *Add all ingredients to a bowl and mix until combined. Shape into 1 inch balls and place on a baking sheet. Bake for about 12 minutes at 425 degrees. I use a meat thermometer to double check they have reached 165 degrees internal temperature. Greek Salad: -handful of cherry tomatoes, quartered -1/2 large cucumber, chopped -1/4 red onion, sliced into 1 inch slivers -1/2 cup crumbled feta -drizzle with olive oil -salt and pepper to taste *Add all ingredients to a bowl and stir to combine.
