🍫Protein Mocha Tiramisu Makes 4 servings: 195 cals, 10g protein per serving This lighter tiramisu hits all the classic notes but swaps heavy cream and eggs for Greek yogurt and a touch of mascarpone. I used @Simple Mills Chocolate Brownie Sweet Thins instead of ladyfingers - they’re made with a seed and nut flour blend featuring watermelon seed flour making them a crispy crunchy snack, or a vessel to soak up the coffee really well and add an iced mocha dimension to this tiramisu. ☕️Ingredients Coffee mixture 1 cup brewed and chillled coffee (use leftover coffee if you want) 2 tbsp powdered monkfruit sweetener 2 splashes vanilla extract Greek yogurt mixture 225g (1.5 servings) 0% thick Greek yogurt 2 tbsp mascarpone cheese 1/3 cup powdered monkfruit 2-3 splashes vanilla extract 3 servings Simple Mills Chocolate Brownie Sweet Thins (1.5 servings per layer) 1 tbsp cocoa powder (for dusting) Dark chocolate for shaving (optional) 🍰Instructions 1.Mix the coffee, monkfruit, and vanilla in a shallow dish. Let it chill completely. 2.Whisk together the Greek yogurt, mascarpone, monkfruit, and vanilla until smooth. 3.Crack three eggs and separate the yolks (save them for another recipe). Whisk the whites until they form nice peaks. 4.Gently fold the whipped whites into the yogurt mixture until fluffy. 5.Dunk 1.5 servings of Sweet Thins in the coffee for 10–15 seconds each, then layer them at the bottom of your dish. 6.Spread half the yogurt mixture on top. 7.Repeat with the remaining Sweet Thins and coffee, then top with the rest of the yogurt mixture. 8.Dust with cocoa powder and shave dark chocolate on top. #simplemillspartner #highprotein #lowcarb #lowcarbrecipes #healthyrecipes
