A perfect mid-week meal. #akni #ahkni #lambahkni #lambakni #memonakni #aknirecipe #thisbrownmom  Lamb Ahkni Recipe: Ingredients: - 3 cups basmati rice, washed and soaked for 30 minutes - 1 cinnamon stick - 8 black peppercorns  - 4 elachi/cardamom pods - 2 star anise - 1 bay leaf - 1 black elachi - 1 tsp fennel/soomph seeds - 1/2 tsp jeera seeds - 1 sprig curry leaves - 1 large onion, sliced - 1/2 cup water - 2 tbsp butter - 3 tbsp oil - 1 kg lamb on the bone or curry pieces - 2 sprigs of thyme - 1 heaped tbsp green masala - 2 tbsp masala - 3/4 tsp turmeric - 1 tomato, peeled and chopped - Handful of chopped mint - 6 green chillies - 2 potatoes, cut into quarters - Salt to taste - 1 cup water - 2 tbsp yogurt  - Additional butter and mint leaves for topping Instructions: 1. On low heat, add cinnamon stick, elachi pods, star anise, bay leaf, black elachi, fennel seeds, jeera seeds, curry leaves, peppercorns, sliced onion, and 1/2 cup of water to a pot. Allow it to steam until the water evaporates. 2. Add 2 tbsp butter and 3 tbsp oil to the pot. Fry the onions until translucent. 3. Add lamb, thyme, and green masala. Fry on medium heat until the meat gains color. 4. Add masala and turmeric. Fry for a minute. 5. Stir in peeled and chopped tomato, chopped mint, green chillies, and quartered potatoes. Braise for 5 minutes, then add 1 cup of water and salt to taste. Add yogurt and cook for 30-40 minutes. 6. Once the curry has simmered down and meat and potatoes are almost done, layer on the rice (exclude water). If the Ahkni becomes dry, add boiled water 1/4 cup at a time. 7. Top with butter and mint leaves. Cover and cook on low heat for 10 minutes, or bake at 180°C for 30 minutes. 8. Carefully stir to combine and serve.
