That’s how I’d do it too. Only thing I’d do different is I’d add some pasta water when finishing in the pan, makes a huge difference

OK, there is a lot wrong here but becausecur obsessive about the milk. its added to the meat at the start and cooked until reduced almost completely.

It’s not bolognese if your aren’t adding milk. The original recipe has always had milk, any Italian knows this.

Milk softens the proteins in the meat. That’s the job not to make it creamy. However that is how I make ragù
