Oreo cupcakes🧁 Ingredients Cupcakes - 1/2 cup unsalted butter, room temp - 3/4 cup granulated sugar - 2 egg whites - 3/4 cup sour cream - 1/4 cup milk - 1 tsp vanilla extract - 1 1/4 cup all purpose flour - 1 tsp baking powder - 1/4 tsp salt - 3/4 cup crushed oreos Frosting - 4oz cream cheese softened - 2 cups powdered sugar - 1/2 tsp vanilla - 1/3 container Cool Whip Directions - Preheat the oven to 400º F. Line a cupcake pan with cupcake liners. - In a large bowl, beat the butter and sugar, until fluffy, approx. 1-2 minutes. Add in the egg whites, sour cream, milk, and vanilla extract, beating until combined. - In another bowl, combine the flour, baking powder, and salt. - Using a spatula, gradually add the flour mixture to the wet ingredients, about one third at a time. - Fold in the crushed oreos until just incorporated. - Pour batter into each cupcake liner. - Bake for 5 minutes at 400º F. Keeping the cupcakes in the oven, turn the heat down to 350ºF and bake for 8-9 minutes, or until a few moist crumbs remain on a toothpick when inserted into the center. - Using a hand mixer, beat the cream cheese and vanilla together until smooth and fluffy. Slowly add in the sugar while continuing to mix the cream cheese mixture. - On a low speed, add in the Cool Whip. You may need to allow the frosting to set up in the refrigerator while the cupcakes continue to cool.
