Replying to @Gabby Dinner under the influence: piccata-ish chicken with herby roasted carrots and smashed potatoes ft. A vegan version for my mom as well This one felt easy. Maybe I should have been more smashed, but the dinner was delicious and my mom said that “she quits cooking” after trying the chikn i made her. Instructions: - get wrecked - preheat oven to 420 bro - slapchop garlic and shallots - put small potatoes in salted water and set to boil - Toss chunked carrots with olive oil, herby salt, and some sort of sugar and put in oven - Spice pounded chicken with salt pepper and paprika on both sides and dust both sides with flour - when potatoes are fork tender drain them, add olive oil and thyme to parchment on baking sheet, pour potatoes on top, smash with another baking sheet, and add more olive oil and herby salt and add to oven - sear off chicken cutlets in olive oil, remove. - in same pan, add more olive oil if needed, shallots, garlic, capers, and also cherry peppers and anchovies if desired.
