@cookwithhana: Chicken Hot and sour soup, this soup always reminds me of the streets of Kabul, Afghanistan. It would be served with chips and boiled eggs and would always satisfy cravings. Recipe is written below Ingredients: - 3 tbsp Oil - 1 Chicken breast - 1 tsp Ginger - 1 tsp Garlic - Water 2.5 Litre - 2 Carrots - 1 Cup sweetcorn - 1 Chicken cube - 2 tsp Black pepper - 1 tsp Salt - 3 tbsp Light Soy sauce - 2 tbsp Chilli garlic sauce - 4 tbsp Vinegar - 4 tbsp Cornflour - 2 Eggs Method: 1. Cut chicken breast and slightly cook in the oil on medium heat, add grated ginger and garlic. Once chicken is golden brown, add water. 2. Grate 2 carrots using a grater and add to the pot along with frozen sweetcorn and chicken cube. Add black pepper and salt. 3. Remove chicken and shred into small pieces and put back into the soup. 4. Add soy sauce, chilli garlic sauce and vinegar. You can add more or less depending on how you like it. 5. Make a cornflour mixture by adding water to cornflour and add it to the soup slowly while stirring. This will thicken the soup nicely. 6. Break eggs slightly and add into soup slowly stirring. Add more eggs if you prefer. Serve with boiled eggs and chips for the full street experience. I love this soup with extra soy sauce and vinegar.
