Recipe 🎄 1 cup unsalted butter-room temp (use best quality butter you can find. Makes all the difference) 2/3 cup sugar 1 tsp vanilla extract 1/2 tsp almond extract (don’t go over, this is super strong) 1/4 tsp salt 2 1/4 cup flour 1/2 cup raspberry jam Icing 1 cup confectioners sugar 1-2 Tbsp cream or milk 1 tsp vanilla Use mixer with paddle attachment and beat butter until fluffy. Add the sugar and extracts and beat 1 min scrap sides of bowl as you go. Turn speed down and add salt and flour. Mix until a dough forms. Press it into a dough ball and refrigerate for 2 hours. This is very necessary!! Preheat oven to 350°f Line cookie sheets with parchment. Roll each cookie to about a 1 inch dough ball size (like 1 Tbsp each) put on parchment and press thumb Into each one making a well for the jam. Add jam to each one. I use the jam with the seeds! Bake 13 min! That’s it! Let them cool completely before icing them Mix together ingredients for icing and use a ziploc bag with a tiny tiny bit of the corner cut off. Idk why this is awful for me but it is. The dough was rock hard after chilling. Had to let it get soft again to get it into the balls all for it to not let me put a hole in them for the filling. About to throw the dough out. Anyone else run into this? If so how do I fix it? This will be the 3rd time chilling this batch 😔
