@emthenutritionist: miso peanut shaker salad jars AD These shaker salad jars are a revelation, so simple to prepare, full of immune supporting colour, and diversity whilst tasting GOOD. Using some of my favourite grocery items from @itsu, the nutty soba noodles pair so well with the miso peanut dressing. Once prepped, store in an airtight container for 3 days. Feel free to use whatever vegetables or protein takes your fancy, this recipe is super versatile! You will need to make 3 jars at 340kcal & 27g protein 2 nests of soba noodles (126g dry weight) 1 large carrot, julienned or peeled into ribbons 3 heaped tbsp cooked edamame or peas 1 red pepper, diced Handful of shredded red cabbage Fresh coriander 200g cooked shredded chicken breast For the sauce per jar 1 tsp peanut butter 1 tbsp light soy sauce 1 tsp toasted sesame oil 1x sachet Itsu Traditional Miso Cook the noodles to the packet instructions, drain and rinse thoroughly under cold water. Set to one side. Prep all your vegetables. Grab 3 Kilner jars or air-tight containers. Add 1 tsp peanut butter, 1 tbsp light soy sauce, 1 sachet of miso and 1 tsp toasted sesame oil into each. Mix a little then divide the cooked noodles equally, then start to layer the vegetables and chicken, push down slightly if you need more room. Finish with a handful of fresh coriander. Store in the fridge for 3 days. To serve, add 1 tbsp hot water and shake the jar. I like to tip into a bowl and give a good mix before diving in. #mealprep #healthyrecipes #noodles
