@gayanefood: PERFECT WINTER ROAST VEG SALAD * 250g raw beetroot, cubed * 250g raw carrots, cubed * 250g salad potatoes, cubed * 250g gherkins, cubed * 1 x400g can red kidney beans, drained (use cannellini beans or chickpeas, if you prefer) * 1 small red onion, chopped * 25g coriander, chopped * 20g dill, chopped * 10g parsley, chopped * 40ml olive oil * Juice of 1/2 lemon (optional) * Salt and ground black pepper Heat the oven to 210C. Drizzle the vegetables with olive oil, season and roast for 20-25 minutes. Set aside to cool down.
