Sticky Toffee Pudding Ingredients:   1 cup All purpose flour 1 tsp. baking powder 3/4 cup pitted dates, chopped fine 1 1/4 cup boiling water 1 tsp. baking soda 1/4 cup unsalted butter, softened 3/4 cup sugar 1 large egg, lightly beaten 1 tsp. vanilla Toffee Sauce: 1/2 c. unsalted butter 1/2 c. heavy cream 1 c. packed light brown sugar 2-3 Dash of cinnamon Preheat oven to 350 degrees. Butter ramekins. In a small bowl, pour boiling water over chopped dates and let soak. In a different bowl sift flour and baking powder. In a separate bowl beat sugar and butter till fluffy. Add egg and vanilla to sugar and butter and blend well. Mix in flour mixture in small batches. Add dates and water. Slowly mix until combined. Pour into buttered ramekins and bake until set and firm on top, about 15-18 minutes. I like to set a timer for 12 minutes and then keep a close eye on them until the tops have settled then remove from oven. Toffee Sauce: While that bakes add butter, heavy cream, cinnamon and brown sugar to a saucepan or pot and heat to a boil, stirring constantly. Then simmer on medium heat until the sauce is thick.
