Halloumi & Vegetable Tikka Masala with Garlic & Chilli Potato Wedges AD / On a night when all you want is a lovely, lazy Indian takeaway, you have got to try this really simple, insanely delicious Veggie Tikka Masala and spiced wedges. You don't have to faff around with loads of ingredients and spend hours cooking, because @Gymkhana Fine Foods  have done all of the hard graft for you! Their sauces and marinades are 100% natural. There's no preservatives and absolutely no artificial colours. They're inspired by the 2 Michelin Star Mayfair restaurant, Gymkhana. You don't have to trek over to Mayfair to get them as these have just landed in Sainsbury's stores - I've written up the recipe for this below, let me know if it's going on your shopping list! A x #summercurry  #gymkhana  #easywin  Feeds 4 1kg Maris Piper potatoes Vegetable oil 2 tbsp Gymkhana Roasted Garlic & Chilli Marinade 225g block of halloumi cut into 1cm cubes 260g tub of mixed mediterranean vegetables 300ml Gymkhana Tikka Masala Sauce Peel the potatoes, cut them into wedges and soak them in cold water for a couple of minutes, changing the water twice to rinse off the starch. Place the wedges in a saucepan and cover them in cold salted water. Bring the potato water to a simmer and cook for around 5-7 minutes. The potatoes should still be firm enough to shake them up without them breaking. Heat the oven to 220C fan Drain the potatoes in a colander and give them a good shake. Allow them to steam dry. Tip the wedges into a pan and brush with vegetable oil and season generously with salt. Roast in the oven for around 20 minutes or until nearly cooked. Drizzle 2 tbsp of the chilli marinade over the top. Use a fish slice to turn them over until coated. Return to the oven for around 5 more minutes, or until cooked. In the meantime place the halloumi in a dry, hot pan and fry for 5 minutes, turning regularly until golden brown. Set the halloumi aside and add a drizzle of oil to the pan. Add the vegetables and fry for 5 minutes until soft. Stir in the Tikka Masala sauce and a couple of tablespoons of water. Return the halloumi to the pan and give it a good stir. Simmer for 3-5 minutes until heated through. Serve with the chilli wedges, some shredded lettuce and naan if you like. #comfortfood #cosydinner #delicious #sotasty
