TOFU SCIENCE PT. 2 TWICE FROZEN + PRESSED 👨🔬 Yes, we froze it twice. Yes, we pressed it. Are you happy now? 😜 P.S. this is legit the best chicken katsu recipe, so go get at it. Ingredients (serves 2) 600g medium-firm tofu 250 ml vegan chicken stock 0.5 cup plain flour 150 ml water 100g panko breadcrumbs Neutral oil for frying For the sauce: 1 onion 2 cloves garlic 1 tbsp ginger 3 tbsp curry powder 1 tbsp soy sauce 1 tsp turmeric powder 1 tsp brown sugar 2 tbsp plain flour 500 ml veg or vegan chicken stock 200 ml coconut milk 1 large carrot 3 potatoes Instructions 1. Drain the tofu, pop it in a container and freeze it. Fully defrost it, drain off any liquid and re-freeze. Defrost it one last time and once fully defrosted it, pop it in a tofu press for 30 minutes to remove the excess water. 2. Pop the pressed tofu back in a tub and cover with vegan chicken stock. Set aside while you make the sauce. 3. Add a splash of oil to a saucepan over medium-high heat and fry the onion until soft. Add the garlic, ginger and spices for a minute. 4. Stir in the flour and then start adding the stock a bit at a time, like making a roux, making sure to work out any lumps until you’ve added all the stock. Then add the coconut milk. 5. Bring to a simmer then add the sugar, soy sauce, potatoes and carrots. Stir and simmer for ~15 minutes until the veg is cooked. 6. While to curry sauce cooks, mix the flour and water together in a flat-bottomed bowl and pop the panko breadcrumbs into another bowl. Dip each bit of tofu in the batter, then cover in breadcrumbs. 7. Get enough oil to shallow fry the tofu into a pan and bring up to a medium heat. Carefully put the tofu in and fry on both sides until golden-brown. 8.
