@saras_eats_and_sweets: THE BEST LOADED SWEET POTATO! 🍠✨ Savor the flavors with this decadent combination– a symphony of sweetness, savory toppings, and pure deliciousness! These are the perfect prep ahead lunches if you’re looking an easy and high protein meal! Healthy, satisfying and delicious! Ingredients~ - 4 large sweet potatoes - 1 lbs ground chicken/turkey - 2 tsp. Greek freak spice mix - 1tsp. Garlic powder - salt to taste - hummus - 1/4 red onion - 2 scallions - 1/4 cup fresh parsley - 1 lemon - Extra virgin olive oil Directions~ Preheat your oven to 425°. Meanwhile, scrub your sweet potatoes and pat dry. On a parchment lined baking sheet, pierce all potatoes with a fork 8-10 time to allow steam to release while baking. Bake in the oven for 45-60 minutes (depending on size of your potatoes) or until they are fork tender. While potatoes are baking, prepare your ground chicken. I used @SPICEOLOGY Greek Freak spice mix along with garlic powder, salt, and olive oil, and it was delicious combination that complimented all of the other flavors perfectly. Finely chop your red onions, scallions, and parsley, and set aside. Once the potatoes have finished baking, allow them to cool for 10 minutes before slicing into them. Once coooled, sliced potatoes in half and add in your ground, chicken followed by a dollop of hummus, your onions, scallions, parsley, a drizzle of olive oil and a squeeze of fresh lemon.
