I tried to make this today, I had been grocery shopping (for almost 2hrs) with a toddler before hand and was absolutely starving! I made one quesadilla and just couldn’t wait any longer. I ended up dicing the cheese adding it to the filling and put some of the Greek yogurt and a squeeze of lime juice mixed it and heated up the two other tortillas and just ate it like tacos. Still delicious and SO filling!!
