Spicy Vodka Eggs in Purgatory with Ricotta 🌶️ 🍳  If Brunch had a main character, this would be it. Eggs simmered in @CarboneFineFood Spicy Vodka Sauce, finished with freshly grated parmesan cheese, creamy dollops of ricotta and fresh basil. It’s rich, cozy and made for scooping with crusty bread. She’s spicy, low effort and the main character of brunch. What you’ll need: 	•	1 1/2 cup Carbone Spicy Vodka Sauce 	•	3 oz heavy whipping cream 	•	1/2 of a small yellow onion (finely diced) 	•	2 -3 garlic cloves ( minced) 	•	Salt and pepper  	•	4 -5 eggs  	•	1/3 cup ricotta cheese ( season with salt & pepper plus about 1 tsp of lemon zest) 	•	1-2 tbsp olive oil 	•	Bread for dipping 	•	Ricotta cheese 	•	Freshly Grated Parmesan cheese  	•	Fresh basil 	•	Edible flowers (optional) Directions: 	1.	In a skillet, heat olive oil over medium heat. Add the onion and cook until softened. Add the garlic and cook for 30 seconds or until fragrant. 	2.	Pour in 1.5 cups of the Carbone Spicy Vodka Sauce and the heavy whipping cream. Let it simmer for about 3 minutes until warm and bubbling. 	3.	Use a spoon to create little wells in the sauce. Crack or pour the egg into each one. Spacing them out evenly. Season with salt and pepper. 	4.	Lower the heat slightly and cover. Let the eggs cook for 5-7 minutes, or until the whites are set and the yolks are still jammy/runny ( or cooked to your liking). 	5.	Once the eggs are just about done add dollops of  ricotta around the eggs and in the sauce.  	6.	Add lots of freshly grated parmesan cheese, fresh basil and a few edible flowers. 	7.
