@nikkifriedberg: Low-FODMAP Vegan Carrot Soup Ingredients: 2 lbs carrots 4-6 cups water or low-FODMAP vegetable broth 1.5-2 inch knob fresh ginger (alternatively, you can use 1.5-2 tsp ground ginger, or 3-4 cubes of frozen grated ginger from the grocery) 1.5-2 tsp salt + more to taste 1 tsp pepper + more to taste 1 tbsp thyme 1 tsp garlic-infused olive oil 1 can (13.5 oz) coconut milk Directions: 1. Peel and cut the carrots into roughly one-inch pieces. 2. Add carrots and water/broth to a pot. 3. Add ginger, salt, pepper, thyme, and garlic-infused olive oil. 4. Bring the pot to a boil and let simmer for roughly 30 minutes, or until carrots are tender. 5. Once carrots are tender, turn the stove off and add coconut milk. 6. Blend together with an immersion blender or regular blender. 7. Once blended, taste and add an extra low-FODMAP flavors you like. 8.
