@nikkifriedberg: A little bit about me... I have had a sensitive stomach my whole life and as I got older, it continued to get worse. Eventually, I was diagnosed with IBS and spent years trying everything under the sun to make myself feel better. Different things worked here and there, but eventually, nothing helped anymore. Despite being on medication, my symptoms were not entirely managed, so I decided to try a low-FODMAP diet. FODMAPs are a set of carbohydrates that are harder for the body to digest and for people with IBS and sensitive stomachs, they can cause a great deal of discomfort. On top of having a sensitive stomach, I also eat a plant-based diet, which can make eating low-FODMAP even trickier. When I first started this journey, I could only find one recipe book specific to vegans who wanted to try a low-FODMAP diet. It was a great start, but not enough. I have spent years finding ways to make my favorite foods in a way that makes me feel great and doesn't compromise on taste.
