Pre-heat your paella pan over low heat (a cast iron or stainless steel pan will also work great) 3. Wrap your saffron in tin foil, and toast it for ~1 minute or until fragrant. When cooled down, finely chop your saffron. 4. Turning your pan to medium-high heat (NOT as high as you see in the video - my pan was too hot…), and 2 tbsp neutral oil, and sear your proteins until golden. Do NOT cook them all the way through - you will finish cooking them later. You do not need to sear your mussels and clams. 5. After searing your proteins, if your pan is not too scorched (mine was… so I had to clean it before moving on to the next step 🙃), turn your heat down to low, and add your chorizo along with 1 tbsp of olive oil. Sauté your chorizo until fat begins to render, and your chorizo is slightly browned. Then add your onions, peppers and garlic, and sauté everything until slightly caramelized. Add your paprika and saffron, and sauté for 30 more seconds until fragrant. Add your tomato paste and sauté for 1 more minute. 6. Add your white wine to deglaze your pan, and reduce until a syrup-like consistency. Add your grated tomato "sauce" and do the same. Add 3 + 1/2 cups of stock and bring to a simmer (reserve 1/2 cup for later, if needed). Add your bomba rice, making sure to evenly distribute it around the pan. From here, you will not touch or stir your rice (this is important - let it do its thing!) 7. Make sure your pan is on LOW HEAT (this will allow for gentle cooking, and prevent scorching). Allow rice to cook for 12-15 minutes, or until you see an even layer of rice fully emerging above the surface of the liquid. This even layer is very important! If part of your rice isn’t covered in liquid, while another part is, spoon over some of the other liquid where it is pooling, or add from your 1/2 cup reserve of stock. 8. At this point, add your mussels, clams, and other proteins. Cover with a tray or lid to help everything steam. After 3-5 minutes, your mussels and clams should be open, and your other proteins cooked through. At this point, if your rice is not already dry and fully cooked (having absorbed all the liquid), allow to cook uncovered until finished. 9. Garnish with some finely chopped chives, and enjoy! NOTE: Regarding your heat source, two things are very important; 1. Your heat source needs to evenly distribute heat around the pan. There are special paella burners that are designed specifically for this, although any induction/electric cooktop will work too. My little camping burner had a small heating element that did not allow my rice to cook as evenly as I would have liked - great for outdoor filming but not ideal for the perfect paella! 2. Make sure your cooking surface is level! This is critical when making paella. If for whatever reason your stove/burner is slanted, you will not be able to make paella.
