The kabocha is a cake-like squash that is prized for its incredible texture and sweet pumpkin flavor. It goes perfectly in this dessert because it creates such a rich creaminess. Paired with sweet, pudding-like black sapote and melted vegan chocolate .. make sure to save this and make it while these fruits are in season! Cake Ingredients 1/2 kabocha squash 1 large ripe black sapote 1.5 cups melted chocolate Chocolate Ganache Ingredients 1 cup melted chocolate 1/2 can full fat coconut milk 1/4 cup maple syrup Directions Cut squash, take out seeds, steam until tender. Let cool down then remove skin (you can do this before cooking but it’s more difficult). Add squash, black sapote, and melted chocolate to a blender or food processor. It’s a dry mixture so make sure to use a tamper to help blend. Add cake filling to a lined springform pan. Keep in the fridge for about 4 hours or overnight. Add all ganache ingredients to a double boiler, once melted whisk until fully combined. Keep in freezer for 1 hour (or until thick but not solid). Remove from fridge then take off spring form lining.
