Remove and let it rest. 	2.	Spoon out any extra butter if there’s too much left in the pan—just enough so the sauce isn’t greasy but still keeps all the flavor. 	3.	In the same pan, add minced garlic and cook for 30 seconds until fragrant. 	4.	Add chopped Roma tomatoes or whole cherry tomatoes and sauté until softened, about 3–4 minutes. 	5.	Stir in 1 tbsp tomato paste and cook for another minute. 	6.	Pour in 1/2 cup broth or wine to deglaze the pan, scraping up the browned bits. Simmer for 1–2 minutes. 	7.	Lower the heat and stir in 1/2 cup heavy cream. Now’s the time to taste and season the sauce with any salt, pepper, or garlic salt you like. 	8.	Stir in 1/4 to 1/2 cup Parmesan (depending how cheesy you like it) and the chopped basil. Mix until smooth and creamy. 	9.	Add in the cooked pasta and toss until fully coated in the sauce. 	10.	Slice the steak and serve it over the pasta. Finish with extra Parmesan and basil if you like.
