Here, we have a deconstructed baklava dessert. Caramilsed Fillo pastry filled with a light rosewater mascarpone cream, pistachio white chocolate spread, roasted walnut puree, sesame toasted marshmallow, granny smith apple foam, and speculoos white sesame ice cream. My thoughts? I aimed to recreate a baklava dessert with a deconstructed twist while keeping similar textural and taste aspects. Everything worked well, but the portion size could have been smaller; for instance, only one caramelised fillo-filled roll would have been better. The apple foam gave it a lovely balance but could have been sweeter. I loved the speculos and white sesame ice cream; it was almost the dish's star. It has a peculiar taste which makes you think for a moment what you are tasting but is shortly followed with, "Oh wow, how pleasant". Taste 8/10 Visuals 6.5/10 Interesting notes? Many of these desserts, especially the thirst trap ones, are the ones I experiment with more technically to learn new techniques and skills. As mentioned above, the portion sizes are only sometimes perfect, yet they match texturally and taste-wise. Due to time constraints, I don't go back and readjust quantities for an excellent visual and taste shot. Instead, I make notes of these recipes for a future occasion in which I might implement this dish in my future business. This is primarily due to technical aspects, and I don't discuss the complete techniques; however, components that work, are easily replicable, and delicious, i.e., speculoos and white sesame ice cream are then posted in contrast (see website). Tips I just learned! For marshmallows, you can use spray oil when you first set them. You don't need to mix cornstarch and icing sugar to stop it from sticking. It prevents you from using cornstarch, which doesn't torch as well as icing sugar alone. Recipe notes: Apple Foam (experimental): Test 2 - 250g apple juice - 50g water - 50g sugar (maybe add more sugar) - 3g citric acid - Three gelatine sheets - 2 gas charges Sesame Marshmallow: - 25g toasted sesame seeds - 80g water - 130g caster sugar - 60g liquid glucose - 4 gelatine leaves - 100g egg whites
