To bloom gelatin powder, multiply the amount of powder by 4 and add cold water. For example, if you have 10 grams of gelatin powder, you'll need 40 grams of cold water to bloom it. If you're using gelatin leaves, soak them in ice water to bloom them. As for the formula: 1 gelatin leaf equals 5 grams of powder for every 5 grams of gelatin powder, you need 20 grams of water.
