There are many ways to reuse you stale bread and this recipe is definitely one of my favourites. Pappa al Pomodoro is an ancient recipe typical of the Tuscan peasant tradition, a dish that has been developed specifically to make the most of stale bread. I've been making this for years! I usually add some black olives or capers. And i rub the bread with a garlic clove first.

My version is to not mix the bread in but once soft brush it with garlic butter and cheese and bake until light golden brown and serve with fresh basil and good wine. Looks pretty and tastes amazing.
