Ice Cream Tacos! 🍀 Ingredients: * 2 whole eggs * 1 egg white * 1/3 cup granulated sugar * 1 tsp vanilla extract * 1 cup ap flour * 3 tbsp melted butter * 1 quart ice cream * 1 bag Chocolate melts * Toppings of choice (peanuts, sprinkles, etc.) Directions: 1. Whisk the eggs and egg white in a bowl until combined. 2. Add sugar to the eggs and whisk until lightened in color. Then add the vanilla extract. 3. Sift flour into egg mixture and mix until fully combined. 4. Mix in melted butter until the batter is smooth and lump free. 5. Cook one heaping tablespoon of batter on your preheated waffle cone maker. Cook time will vary depending on machine, I cooked mine for about 2-3 minutes. 6. While the waffle is still warm, quickly fold it in half over the handle of a wooden spoon or spatula to create taco shell shape, holding the waffle in this shape until cooled. 7. Melt the chocolate in the microwave at 30 second intervals and use an offset spatula to coat the inside of each shell with a thin layer of chocolate. 8. Fill each shell with your favorite ice cream flavor. (Tip: put the tacos in the freezer if they start melting) 9. Dip each taco in the rest of the chocolate, making sure to fully cover the ice cream. Quickly sprinkles with toppings of choice. 10. Place the tacos back in the freezer until you are ready to serve.
