@georginaelizat: Almond croissant cookies! When I first saw these go viral by @Ryan Nordheimer and then @Remi Idowu I knew I needed to remake them. They were ridiculously good and my fiancé said they were the best things I’ve ever made…. so you neeeeed to make them Ingredients 150g / 1.1 cups plain flour 100g / 1 cup ground almonds 1/2 tsp baking soda 160g / 0.8 cup soft light brown sugar 150g / 3/4 cup super fine white sugar 1/4 tsp salt 1/2 tsp almond extract 1/2 tsp vanilla extract 1 egg + egg yolk or 1 flax egg 165g / 3/4 cup melted unsalted butter 1/2 cup/ 40g flaked almonds 1 tbsp icing sugar Instructions 1. Whisk your sugars, butter and salt together. Then add your extracts and egg + yolk or flax egg. Combine until ribbons form, do not overmix. 2. Add your flour, baking soda and ground almonds. Mix with a spoon. Chill in the fridge for 30 minutes. 3. Use an ice cream scoop to form into 12 cookie dough balls. Roll the top of the cookie in the flaked almonds. Freeze for 1 hour. You could keep the cookie dough balls in the freezer for longer if you didn’t fancy 12 right away! 4. Pre-heat the oven to 180C/ 360F. Bake on a baking paper lined tray for 10 minutes. Then remove and immediately circle around them with a bowl and add more flaked almonds if you want to fill in any more gaps on top of the cookies.
