In just 15 minutes you can make the most DELICIOUS & comforting One-Tray Red Curry Dumpling Soup🧑‍🍳💋 Here’s what you need 👇 For the bake: * 400ml can reduced-fat coconut milk * 2 tbsp red curry paste * 2 tbsp soy sauce * 1 tbsp sesame oil * 1/2 tbsp lime juice * ½ cup vegetable or chicken stock * 1–2 tsp minced ginger (to taste) * 1 tsp minced garlic * 2 bunches of bok choy, sliced * Frozen dumplings (any variety — veggie, chicken, prawn), depending on desired servings To serve: * Chilli oil * Sesame seeds * Lime wedge (optional) * Spring onions, sliced * Fresh coriander, chopped * Extra veggies of choice (I used sliced snow peas (raw) and bean shoots) * Optional protein boost: edamame or soft-boiled egg 🥣 Method: 1. Preheat your oven to 200°C (fan-forced). 2. In a baking dish, whisk together the coconut milk, red curry paste, soy sauce, sesame oil, lime juice, stock, ginger, and garlic until well combined. 3. Add in the sliced bok choy, followed by the dumplings - nestle these into the sauce in a single layer. 4. Bake the dumpling tray for ~15 minutes, or until the dumplings are tender and cooked through (they should appear slightly translucent). 5. While the dumplings bake, bring a small saucepan of water to a boil. Gently lower in the eggs and cook for 6–7 minutes for a soft-boiled yolk. Transfer to an ice bath immediately to stop cooking and make peeling easier. 6. Serve hot, topped with a drizzle of chilli oil, sesame seeds, chopped herbs, sliced spring onions, and extra veggies of choice such as snow peas and bean shoots. Add edamame or a soft-boiled egg for an extra protein boost (optional). Recipe inspo thanks to @Danielle Brown | easy recipes 👸 #onepandinner #easydinner #dumplings #curry
