OREO CREAMCHEESE MUFFINS * 1 cup All-purpose flour * 1/4 cup Unsweetened cocoa powder * 1/2 cup White granulated sugar * 1/2 tsp Baking powder * 1/2 tsp Baking soda * ½ teaspoon Salt * ¾ cup Buttermilk * 1 egg * 1/4 cup vegetable oil * 1 tsp Vanilla extract * 1/2 cup Oreo chunks plus more to top the muffins CREAMCHEESE FILLING *1/2 cup Creamcheese *1/4 cup Sugar *1/2 tsp vanilla *1 tsp All Purpose Flour Instructions: * Preheat oven to 425F. * In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt until well combined. * Add the buttermilk, egg, oil, and vanilla to the dry ingredients. Gently mix until just combined. * Gently fold in the chopped Oreo chunks into the muffin batter. For the Cream Cheese Filling: * In a separate bowl, prepare the cream cheese filling by mixing cream cheese, sugar, vanilla and flour. Mix until smooth. * Line a muffin tin with liners and fill each liner with the batter. * Squeeze the cream cheese filling into the center of each muffin. * Sprinkle additional Oreo pieces on top of each muffin. * Place the muffin tin in the preheated oven and bake for approximately 15 minutes or until a toothpick inserted into the muffins comes out clean. * Once baked, remove from the oven and allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
