Sourdough discard pretzel/bagel bites 🥨 For the Dough - 1 cup + 2 Tablespoons warm water - 1 Tablespoon dark brown sugar - 1 ¼ teaspoons active dry yeast - 200 grams (about ¾ cup) sourdough discard, at room temperature - 567 grams (about 4 cups) all-purpose flour - 2 teaspoons salt - 4 Tablespoons unsalted butter melted For Boiling - 10 cups water - ⅔ cup baking soda For Topping - 1 egg yolk beaten with 1 Tablespoon water to make an egg wash - flaky sea salt - everything bagel seasoning 1. Combine warm water, yeast and brown sugar. Let sit for 5 mins. 2. Add discard, flour, salt, melted butter. Mix till a dough forms 3. Place dough in an oiled bowl and let rise for 1-2 hours or until doubled in size 4. Line baking trays with parchment paper 5. Divide dough into 8 equally sized portions, roll out into a rope and cut 10-14 pieces per rope. Roll each piece into a ball 6. Drop balls into boiling water for 30 seconds on each side. Place back onto parchment lined tray. Brush with egg wash and toppings of choice (flaky sea salt, everything but the bagel) 7. Transfer trays to 450 degree oven for 13-17 mins 8.
