This is THE BEST tikka masala recipe I’ve made. I crave Indian takeout and this hit the spot every time. Next time I want to make naan! What you’ll need:  FOR THE CHICKEN MARINADE: 4 chicken thighs 1 cup Greek yogurt 1 tablespoon lemon juice 1 tablespoon ginger/garlic 1 teaspoon turmeric powder 1 teaspoon garam masala 1 teaspoon ground cumin 1 teaspoon ground coriander 1 teaspoon smoked paprika 1 teaspoon salt 1 tablespoon oil FOR THE MASALA SAUCE: 1 tablespoon oil 1 large onion, finely chopped 2 cloves garlic, minced 1-inch ginger, grated 1 teaspoon ground cumin 1 teaspoon ground coriander 1 teaspoon garam masala ½ teaspoon turmeric ½ teaspoon smoked paprika 2 tablespoons tomato paste 1 can (14 oz) crushed tomatoes 1 cup coconut milk 1.5 cups of cooked rice  1. Marinade the chicken. In a large bowl, add diced chicken and the rest of the ingredients. Cover and refrigerate for at least 1 hour.  2. Heat a medium pan. Drizzle your pan with oil and then cook your chicken for 8-10 minutes. Remove from pan and set aside.  3. To the same pan, add chopped onions and sauté for 5-6 minutes. Add ginger and garlic. Then add all of your spices. Mix and toast for a few seconds.  4. Mix in tomato paste and cook for 1-2 minutes. Add crushed tomatoes and simmer for 10 minutes. Add coconut milk and mix until well incorporated. Add your chicken in and mix until the chicken is well coated.  5. To a bowl, add cooked rice and add chicken to it.
