coordinating hands and feet actually makes me panic... automatic helps with this therefore and I own taking that route if it means I'm also safer to others on the road

I never ever do that. I lift my clutch up to the bite , release the handbrake , and your already moving slightly , then just slowly put your foot on the accelerator , just easier for me 😂
