So I had to do this once, and the police sketch artist had a book of each feature, like pages of eyes, ears, face shapes. I picked out features and then we went from there

actually they have sketches or pics of different parts of the face you look at and basically put it together that way by pointing out which looks most like the perp then they sketch it from there
