@grillinwithdad: Let’s make some delicious pulled pork tacos on my brand new @webergrills Searwood XL 600 pellet grill. I like to use a bone-in pork shoulder, score the fat cap an season heavily with your favorite bbq rub. Starting the Searwood couldn’t be any easier. Turn the dial, set the temp and hit start. A few minutes later it’s up to temp and the pork shoulder goes on. I used the built in temperature probe to monitor the internal temperatures. I put my veggies right next to the pork for about an hour or so, to make my smoked salsa verde. Mix all the salsa ingredients and set aside. When the pork hits 160 degrees internal, remove from the grill and place in a foil pan, add the salsa and cover with foil. Place the whole thing bank on the grill and cook until fork tender, around 204 degrees internal. Remove from the grill, let it rest for an hour and shred the meat. And finally, assemble the tacos! I used flour tortillas, plenty of that delicious pork, smoked salsa, pickled red onions, cheese and cilantro. And they turned out delicious! The Searwood ran like a champ. Temps held steady, produced a nice mild smokey flavor and was so easy to use!
