@hrnaeatz: The proper smash burger requires a beautiful cheese skirt! 🧀❤️ Cheese skirt smash burger: Ingredients: 1lb ground beef (I like 90/10) Block of cheddar cheese Burger buns Romaine Lettuce Tomate 1 large white onion sliced 2 tbsp butter Sauce: 1/4 kewpie mayo Lt splash of jalapeño juice 2 pickle skewers diced 1/2 tsp white pepper or regular Pinch salt 1/2 tbsp ketchup 1 tsp mustard 1/2 tbsp garlic powder Directions: 1. Prep your ground meat by shaping into 4 equal sized balls. Set aside. 2. Slice your onions. Add to a hot pan on med low heat w 2 tbsp butter. Sauté for a min until butter is melted, and onions are slightly softened. Then add a splash of water and cover. 3. Let them cook for about 5 mins. The steam will speed up the caramelization process. 4. Once they’re looking softened and a lighter brown color remove lid add a splash of oil and sauté until they’re fully caramelized about 3 mins or so. 5. For your sauce just combine all your ingredients in a bowl. Mix and adjust seasonings to your liking. 6. Shred your block of cheese. 7. Prep your meat. Season the top of the patties. 8. In a hot pan, over med high heat, place your meat seasoned side down. W parchment paper and the back of a spatula firmly press down on the meat to create the smashed patty. Season the top side. 9. Cook for about 3 mins then flip over. It should have a nice char. Let it cook for a min or so. 10. Then cover in the shredded cheese. There should be about a 2in diameter of cheese large than the burger. 11. Let it melt then cover w a lid. Once the cheese on the burger has melted uncover and let the cheese skirt keep cooking. 12. Once the edges are starting to look set remove the burger. Should be about 3 mins. 13. Place your burger w the cheese skirt on warm buns. Top w sauce, lettuce, tomatoes, and caramelized onions.
