@erekasfood: This easy CANNOLI SKILLET PANCAKE (RECIPE BELOW) is perfect for Mother’s Day brunch!! Make a few because they go fast. For the Pancake 2 cups pancake mix 1 ½ cups water 1 egg Zest from 1 orange ½ tbsp butter For the Cannoli Topping 2 cups ricotta STRAINED OF ANY EXCESS MOISTURE 1 cup mascarpone or full fat cream cheese ⅓ cup powdered sugar 1 tsp vanilla extract 1 cup chopped pistachio 4 ounces dark chocolate shaved -Preheat oven to 350F -Place a 9 inch skillet in the oven and preheat for 10 minutes. -In a large bowl mix together pancake mix, water, egg and zest from one orange. -Remove the skillet from the oven and add ½ tbsp butter. -Once the butter has melted, add the pancake batter. Bake in the oven on the middle rack for 15 minutes or until golden brown and cooked through. I toothpick inserted into the center should come out clean. -While the pancake bakes mix together the cannoli topping.
