@cheflovely: #LoveYouLetsEat Shrimp and Veggie Jacket Potato Rub potato with olive oil, S&P. Bake for an hour and fifteen minutes at 400°. Slice open and drizzle with melted butter, season with S&P then smear a generous dollop of Boursin on top. Steam broccoli then toss in butter & S&P. Sauté 2 handfuls of spinach in olive oil. Add a pinch of red chili flakes and season with S&P. Sauté bell peppers and onion in olive oil and a small pad of butter. Season with S&P. Season shrimp with S&P, sear one side of the shrimp in olive oil until you get some color, flip the shrimp over, add in a pad of butter and a big squeeze of lemon juice. Turn off the heat and let stand for another minute. For the Cajun Parmesan sauce - In a small saucepan over medium high heat add in about 1/2 c of heavy cream, juice of half a lemon, a splash of water, your favorite Cajun seasoning, a pinch of old bay and about 1/4 c of grated Parmesan. Stir and cook until sauce has slightly thickened. Taste and adjust seasoning with salt if necessary.
