Ingredients: - 1 kg chicken - 1 onion - 1 tomato - 600 grams mallow leaves - 4 cups water - 1 head of garlic - Salt & pepper - 2 bay leavss - 4 cardamom pods - 2 tbsps ghee - 1 tsp coriander powder - start by boiling the chicken pieces with 4 cups of water. The aromatics. Onion and tomato. ( should take around 30 minutes) - pluck the mallow leaves from the stems and give them a thorough wash and dry. - blend the leaves till they form a fine paste. - remove the chicken pieces from the stock and broil them in the oven for some color and texture. - Strain the stock till fully clear then add the mallow paste. Be a bit quick with this step and start whisking till comes to a boil and take it off the heat. ( this is important in order to prevent it from separating. If it does. You can use an emulsion blender to give it a smoother texture) - finely chop the garlic and fry in the ghee till it turns golden. Add the coriander powder to it then pour it straight into the stew pot. - serve it with a few slices of lemon. Vermicelli rice.
