Marry Me Foods pt 2: Mom’s Oatmeal Chocolate Chip Cookies I promise you’ve never had an oatmeal cookie this good. Also, this recipe makes 24 large cookies so cut in half if you’re not feeding an army. 1.5 cups shortening (I used crisco) 2 cups firmly packed brown sugar 1 cup granulated sugar 2 egg 2 tsp vanilla 2 cup sifted all-purpose flour 2 tsp salt 1 tsp baking soda 6 cups Quaker Oats (Quick or Old Fashioned, uncooked) 1 pack semisweet chocolate chips Beat shortening, sugars, egg, water and vanilla together until creamy. Sift together flour, salt and baking soda; add to creamed mixture; blend well. Stir in oats (if you don’t have a stand mixture, you might have to use your hands). Mix in chocolate chips. Form using your hands because the mixture will be quite crumbly. Cookies will not spread so form them in the shape you want then on the cookie sheet.
