🍌🍰 Here’s some clips of an upside down banana cake. An absolute show stopper for the Christmas period, from sharing with your family over a cup of tea, to gifting to that old lady to make sure she keeps giving you cash at Christmas. Full recipe and method below:  Cake mixture 🍰 - 3 over ripe bananas mashed with a fork - 240g all purpose flour - 200g light brown sugar - 1/2 teaspoon baking powder - 1/2 teaspoon baking soda  - 2 large eggs - 180ml good olive oil - 120g Greek yoghurt  - 1 teaspoon (5ml) vanilla extract  - 1 teaspoon salt - 1/2 teaspoon cinnamon (ground) - 1/2 teaspoon nutmeg (ground) - 180g dark chocolate (smashed up here with a rolling pin)   Topping 🍌 - 3 bananas, sliced into rings - 150g granulated sugar and 15ml water (to make caramel)  Method 👨‍🍳 - prepare the cake mixture by whisking together brown sugar and mashed bananas into a paste. Add in your olive oil, yoghurt, vanilla extract and eggs until a smooth mixture forms. Add in the flour, baking soda and baking powder, cinnamon, nutmeg and salt - Fold the mixture together until incorporated, and then fold in the smashed chocolate  - Put aside - Prepare the topping by lining the bottom of a cake tin with baking paper and arranging the sliced bananas to cover the bottom of the tin (9 inch cake tin used here) - In a saucepan make a basic caramel by combining the sugar and water and cooking until a light brown caramel forms (do not stir! Shake pan if needed). Pour immediately over the bananas when piping hot - Pour the cake mixture over the caramel covered bananas and smooth over. Put in a preheated oven at 180 degrees Celsius for 60 minutes  - Remove from the oven, let cool for 20 minutes, turn the cake tin upside down and slide off to reveal a beautiful cake!  Happy Sunday!
