Recipe: Ingredients: 1 package (2.2lb/1kg) thawed rolled puff pastry 5 tablespoons extra virgin olive oil 1 large sweet onion, thinly sliced 1 red onion, thinly sliced 1 lb (500g), Baby Bella mushrooms, sliced 2 medium gold potatoes, cooked and mashed 1 teaspoon salt ½ teaspoon black pepper 1 teaspoon turmeric 1 teaspoon garlic powder 1 teaspoon Dijon mustard 1 teaspoon honey Topping: 1 beaten egg Sesame seeds & nigella seeds Method: 1. In a pan over medium heat, warm the olive oil and add the onions. Season with salt, pepper, turmeric, and garlic powder. Sauté for 4–5 minutes until soft and translucent. 2. Push the onions to the edges of the pan and add the mushrooms. Let them cook without stirring for 3 minutes, then mix with the onions. 3. Add the mashed potatoes, Dijon mustard, and honey. Stir everything together and cook until there’s no liquid left. Let cool to room temperature. 4. Divide the puff pastry into 2 equal parts. Roll each part out, place half the mushroom filling along the edge, and roll into a log (“snake”). Cut into 2-inch pieces. Repeat with the remaining dough and filling. 5. Place the pieces upright, side by side, in a greased 10-inch (26 cm) oven-safe pan. 6. Brush with beaten egg and sprinkle sesame & nigella seeds on top. 7.
