INGREDIENTS
FOR THE DOUGH (2 TRAYS 25X35CM)
* 300g bread flour
*200g AP foour
* 280 g water at room temp
* 25 g extra virgin olive oil
* 12 g fresh yeast / 2tsp active dry yeast
* 10 g salt

FOR THE EMULSION
* 50 g extra virgin olive oil
* 30 g water
* Salt
* Semolina flour

* 4 white onions
* extra virgin olive oil
* Salt

PREP
Pour the flour into a bowl and lightly mix it with the yeast. Make a hole in the center, add water and dissolve the salt. Start mixing, adding the oil. Work the dough with your hands until all the flour is absorbed. Knead 10 min. Let the dough rest for 20 minutes. Then, divide the dough in half and shape each half into a rectangle. Let it rise for 40 minutes, until doubled. 
Roll out the dough and place it in a oiled baking pan, dusted with semolina flour. Cover and let it rise for another 40 minutes to 1 hour (until doubled in size).

Thinly slice the onions and sprinkle with salt. Let them rest into a bowl for 30 min. In this way, they will get softer and lose some of their water. 

Sprinkle the surface of the focaccia with flour and make the classic dimples with your fingers.
Squeeze out the water from the onions, add them on the surface of the focaccia. 

For the emulsion, mix everything with an immersion blender and then divide it between the two pans.
Bake in a preheated static oven at 190°C (375°F) for about 25 minutes. Let the focaccia cool on a wire rack. #FoodTok #giallozafferano #italy
